Antony Worrall Thompson helps Jonathan Maitland investigate Britain's growing problem of food waste by preparing a menu from ingredients taken by `freegans' from the refuse bins of London supermarkets. The dishes will be offered to shoppers at Borough Market to highlight the negative impact of sell-by dates and best-before tags, which account for much of the estimated 1.6 million tonnes of food dumped by supermarkets every year.
